Ghra Sambiroto is the name of the aloe vera garden and its processing place, which is located in Banyuroto Hamlet, Kapanewon Nanggulan, Kulon Progo, DIY. There is a 2 Ha aloe vera garden of the Aloe vera var cinensis variety with thousands of aloe vera plants. The harvest time for aloe vera ranges from 8 to 24 months. Aloe vera leaves are used as gel drinks and non-food products. Gel drinks are trendy, but the processing process takes a long time and uses heat. This processing condition can trigger the breakdown of the aloe vera gel's antioxidants. Therefore, it is necessary to alternatively process aloe vera gel into a functional product with high antioxidant activity and benefits for health. This program aims to disseminate the processing of functional aloe vera ice cream as a source of antioxidants and its packaging. The activities were carried out through counseling, processing practices, and mentoring. The results showed that the participants understood the benefits of aloe vera gel for health and were skilled in making functional ice cream before packaging it. The components of the ice cream produced are 31.60-37.15% solids, 18.54-21.56% sucrose sugar, 9.20-9.74% protein, and antioxidant activity with a Radical Scavenging Activity (RSA) value. ) 12.52-14.40.
